In our house bubbles are not just for special occasions; in fact, this particular bubble is in our refrigerator almost every day. Made in the champagne method, this brut does not have the flavour profile of true Champagne but rather is prettier in style, showing the Burgundian fruit. This particular wine is a blend of Pinot Noir, Chardonnay, and Gamay, and has a delicate salmon colour that I love. It’s delicious with cedar-plank wild salmon or charcuterie and hard cheese but has been thoroughly enjoyed alongside French fries, preferably sprinkled with truffle oil and parmesan. In other words the bubbles and acidity cut through salt and fat, but it’s not too citrusy, and the pretty fruit components of red berries are there with a tangy finish. -N
